De buffels werden in wagons vervoerd in open lucht en daardoor verloor het vlees aan vochtigheid. Het vlees droogde dus op natuurlijke wijze. Na het natuurlijke proces kreeg het vlees een heel donkere kleur, vergelijkbaar met gestold bloed. De zwarte laag is in werkelijkheid heel droog en zorgt voor bescherming en bewaring van de binnenkant van het vlees. Bij consumptie werden de transporteurs zich al snel bewust van de smaakevolutie van dit vlees, zacht als boter en ondanks de diep donkere kleur vanbuiten, was het vlees binnenin mooi rood gebleven. Bovendien accentueert dit proces de smaak van het vlees aanzienlijk.<\/p>\n Vandaag is dit chemisch proces algemeen gekend en wordt het gebruikt in onze moderne slagerijen. Het is inderdaad mogelijk om rijpingskamers te installeren, zelfs wanneer de kosten hoog oplopen en wanneer de optimale voorwaarden voor rijping moeilijk te bekomen zijn. Eens in de rijpingskamer duurt het rijpingsproces tussen 21 en 60 dagen. In feite bederft het vlees op gecontroleerde manier. Dit kan een gewichtsverlies betekenen tot 30%.<\/p>\n Op smaakniveau zullen de aanwezige enzymen in het vlees het spierweefsel afbreken. Door het verlies aan vocht en het afbreken van spierweefsel verhoogt de concentratie van smaken en geuren in het overgebleven vlees. De smaak wordt steeds intenser.
